Enjoy these delightful stuffed plantain cups filled with turkey bacon and other savory ingredients.

Ingredients

  • 2 ripe plantains
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the plantains and cut them in half lengthwise.
  3. Brush the plantain halves with olive oil and place them on a baking sheet.
  4. Bake the plantains for about 15 minutes or until they are golden brown.
  5. In a bowl, mix the turkey bacon, cheese, bell peppers, onions, beaten egg, salt, and pepper.
  6. Remove the plantains from the oven and scoop out some of the flesh to create cups.
  7. Fill the plantain cups with the turkey bacon mixture.
  8. Return the filled plantains to the oven and bake for an additional 10-15 minutes until the filling is cooked through and cheese is melted.
  9. Serve warm and enjoy!
