- 2 ripe plantains
- 1 cup cooked turkey bacon, chopped
- 1/2 cup shredded cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 egg, beaten
- 1 tablespoon olive oil
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Peel the plantains and cut them in half lengthwise.
- Brush the plantain halves with olive oil and place them on a baking sheet.
- Bake the plantains for about 15 minutes or until they are golden brown.
- In a bowl, mix the turkey bacon, cheese, bell peppers, onions, beaten egg, salt, and pepper.
- Remove the plantains from the oven and scoop out some of the flesh to create cups.
- Fill the plantain cups with the turkey bacon mixture.
- Return the filled plantains to the oven and bake for an additional 10-15 minutes until the filling is cooked through and cheese is melted.
