  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat together the cream cheese, melted butter, egg, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed, then fold in the chopped strawberries.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes before serving.
