  • 1 onion diced
  • 4 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon brown sugar
  • 2 tablespoons butter
  • salt to taste
  • 1/4 cup cilantro chopped for garnish

Instructions

  1. In a slow cooker, place the chicken thighs, diced onion, minced garlic, and minced ginger.
  2. Sprinkle the curry powder and garam masala over the chicken.
  3. Add the diced tomatoes, coconut milk, brown sugar, and butter.
  4. Stir everything together until well combined.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  6. Once cooked, shred the chicken using two forks and stir back into the sauce.
  7. Serve hot, garnished with chopped cilantro.
