  • 1 pound chicken breast, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup green beans, chopped
  • 1 cup potatoes, cubed
  • salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Add the carrots, celery, and onion; sauté until the vegetables are tender.
  4. Pour in the chicken broth and bring to a boil.
  5. Stir in the thyme, oregano, green beans, and potatoes.
  6. Reduce heat and simmer for 20-25 minutes.
  7. Season with salt and pepper before serving.

Notes
