A refreshing shrimp avocado salad that combines juicy shrimp with creamy avocado for a delightful meal.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add shrimp and cook until pink, about 2-3 minutes per side.
  3. Remove shrimp from skillet and let cool.
  4. In a large bowl, combine diced avocados, cucumber, bell pepper, red onion, and cilantro.
  5. Add cooled shrimp to the bowl.
  6. Drizzle with lime juice and season with salt, then gently toss to combine.
