- 2 pounds ripe tomatoes
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 1 cup heavy cream
- 4 slices bread
- 1 cup shredded cheese
- Preheat the oven to 400°F (200°C).
- Place the tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes.
- Transfer the roasted vegetables to a pot, add vegetable broth, sugar, and basil. Simmer for 15 minutes.
- Purée the soup using an immersion blender or in batches in a blender. Stir in the heavy cream.
- For the croutons, toast the bread slices and top with shredded cheese. Broil until the cheese is melted and bubbly.
- Serve the soup hot, topped with cheesy croutons.
