This comforting roasted tomato soup topped with cheesy croutons is perfect for cozy days.

Ingredients

  • 2 pounds ripe tomatoes
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 cup heavy cream
  • 4 slices bread
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes.
  3. Transfer the roasted vegetables to a pot, add vegetable broth, sugar, and basil. Simmer for 15 minutes.
  4. Purée the soup using an immersion blender or in batches in a blender. Stir in the heavy cream.
  5. For the croutons, toast the bread slices and top with shredded cheese. Broil until the cheese is melted and bubbly.
  6. Serve the soup hot, topped with cheesy croutons.
