  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 9 ounces fresh cheese ravioli
  • 1 cup heavy cream
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in vegetable broth and add diced tomatoes. Bring to a simmer.
  5. Add ravioli and cook according to package instructions.
  6. Reduce heat and stir in heavy cream and baby spinach until spinach wilts.
