  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook until browned.
  3. Add bell pepper, onion, and garlic; sauté until soft.
  4. Stir in Cajun seasoning and black pepper.
  5. Add chicken broth and bring to a boil.
  6. Stir in the penne pasta and cook until al dente.
  7. Reduce heat and stir in heavy cream and Parmesan cheese.
  8. Fold in fresh spinach until wilted.
