Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Add the spinach and sauté until wilted.
  3. Sprinkle garlic powder, onion powder, salt, and pepper over the spinach.
  4. In a bowl, mix the sautéed spinach with feta and mozzarella cheese.
  5. Heat a separate skillet and place a tortilla in it.
  6. Spread the spinach and cheese mixture on one half of the tortilla, fold it over, and cook until golden brown.
  7. Flip and cook the other side until golden and the cheese melts.
  8. Repeat with the remaining tortillas and filling.
  9. Slice and serve warm.

Notes

  • For extra flavor, add sun-dried tomatoes or olives to the filling.
  • Serve with a side of tzatziki sauce for dipping.
