  • 1 tablespoon olive oil
  • 4 strips turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 8 ounces egg noodles
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop.
  2. Add the onion, carrots, and celery to the pot. Sauté until softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Pour in the chicken broth and add the shredded chicken, thyme, parsley, and black pepper.
  5. Bring to a boil, then add the egg noodles. Cook until noodles are tender.
  6. Stir in the chopped turkey bacon and lemon juice before serving.
