  • 1 can diced tomatoes
  • 1 cup rice
  • 2 cups beef broth
  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef and onion until the meat is cooked through.
  3. Add the mixed vegetables, diced tomatoes, rice, beef broth, garlic powder, salt, and pepper to the skillet.
  4. Stir until combined and bring to a simmer.
  5. Transfer the mixture to a greased casserole dish and cover with aluminum foil.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes.
