  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, honey (or maple syrup), melted coconut oil, and eggs.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into a lined or greased muffin tin.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
