  • 1 cup egg noodles
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced vegetables and sauté until tender.
  3. Add chicken breasts, chicken broth, garlic powder, thyme, salt, and pepper.
  4. Bring to a boil and then reduce heat to simmer for 20 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add egg noodles and cook until tender.
