Ingredients

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 8 ounces egg noodles
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until tender.
  2. Add garlic and cook for an additional minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, thyme, and egg noodles, cooking until noodles are tender.
  5. Stir in spinach and season with salt and pepper before serving.
