  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced chicken with olive oil, lemon juice, oregano, salt, and pepper.
  2. Cook the chicken in a skillet over medium heat until fully cooked and golden brown.
  3. In a serving bowl, layer quinoa at the bottom.
  4. Top the quinoa with cooked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  5. Garnish with fresh parsley and serve immediately.

Notes
