  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, juiced
  • 1 pound baby potatoes, halved
  • 1 red bell pepper, chopped
  • 1 red onion, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine olive oil, oregano, garlic powder, onion powder, salt, black pepper, and lemon juice to create the marinade.
  3. Add the chicken thighs to the marinade and let them sit for at least 30 minutes.
  4. On a sheet pan, toss the halved potatoes, red bell pepper, and red onion with olive oil, salt, and pepper.
  5. Place the marinated chicken on the sheet pan with the vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
  7. Remove from the oven and let it rest for a few minutes before serving.
