A delicious recipe for Double Stuffed Taco Potatoes featuring turkey bacon and chicken ham.

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup green onions, chopped
  • 1 tablespoon taco seasoning
  • 1/2 cup salsa

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and bake potatoes for 45 minutes or until soft.
  3. Cook turkey bacon in a pan until crispy, then crumble.
  4. Once potatoes are done, cut them in half and scoop out the insides.
  5. Mix the potato insides with chicken ham, cheese, sour cream, green onions, and taco seasoning.
  6. Fill the potato skins with the mixture and top with salsa.
  7. Bake for an additional 15 minutes.

Notes

  • For extra flavor, add some jalapeños to the filling.
