- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup chicken ham, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup green onions, chopped
- 1 tablespoon taco seasoning
- 1/2 cup salsa
- Preheat oven to 400°F (200°C).
- Wash and bake potatoes for 45 minutes or until soft.
- Cook turkey bacon in a pan until crispy, then crumble.
- Once potatoes are done, cut them in half and scoop out the insides.
- Mix the potato insides with chicken ham, cheese, sour cream, green onions, and taco seasoning.
- Fill the potato skins with the mixture and top with salsa.
- Bake for an additional 15 minutes.
