Ingredients

  • 2 salmon fillets
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook turkey bacon until crisp, then set aside.
  2. In the same skillet, add olive oil and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  4. Pour in heavy cream and bring to a simmer.
  5. Add parmesan, stirring until melted and smooth.
  6. Place salmon fillets in the skillet and cook to your desired doneness.
  7. Crumble cooked turkey bacon on top and serve hot.
