  • 1 pound chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Stir in garlic and cook for 1 minute.
  3. Add the chicken breasts and cook until no longer pink.
  4. Pour in the enchilada sauce, chicken broth, black beans, corn, cumin, and chili powder. Bring to a simmer.
  5. Once the chicken is cooked, shred it in the pot.
  6. Stir in the heavy cream and let it heat through. Add cheese and cilantro before serving.
