3 ripe bananas
1/2 cup unsalted butter, melted
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, mash the bananas with a fork until smooth.
Add the melted butter to the bananas and mix well.
Stir in the sugar, eggs, and vanilla extract.
In another bowl, combine the baking soda, salt, and flour.
Gradually add the dry ingredients to the banana mixture.
In a small bowl, mix the ground cinnamon with a tablespoon of sugar.
Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon-sugar mixture, then add the remaining batter and top with the remaining cinnamon-sugar.
Bake for 60-65 minutes or until a toothpick inserted comes out clean.
Let it cool before slicing.
Notes
For extra moisture, you can add a few tablespoons of yogurt.
Make sure your bananas are very ripe for the best flavor.
