- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes with green chiles
- 1 cup shredded cheese
- 2 teaspoons taco seasoning
- 1/2 cup salsa
- 8 flour tortillas
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chicken, rice, black beans, corn, diced tomatoes, cheese, taco seasoning, and salsa.
- In a 9×13 inch baking dish, layer the tortillas on the bottom.
- Spread the chicken mixture evenly over the tortillas.
- Top with remaining tortillas and cheese.
- Bake for 25-30 minutes until heated through and cheese is melted.
