Ingredients

  • 2 large eggplants
  • 1 ½ cups all-purpose flour
  • 3 large eggs
  • 2 cups breadcrumbs
  • 4 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt; let them sit for 30 minutes.
  3. Rinse and pat dry the eggplant slices.
  4. Set up a dredging station with flour, beaten eggs, and breadcrumbs.
  5. Dredge each slice of eggplant, then fry in olive oil until golden brown.
  6. Layer marinara sauce, fried eggplant, mozzarella, and Parmesan in a baking dish.
  7. Repeat the layers until all ingredients are used, finishing with cheese on top.
  8. Bake for 30-35 minutes until bubbly and golden.
