  • 2 pounds chicken, cut into pieces
  • 2 tablespoons curry powder

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, chopped
  • 2 green onions, chopped
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil

  1. In a bowl, combine the chicken pieces with curry powder, salt, and black pepper. Mix well and let it marinate for 30 minutes.
  2. Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken and brown on all sides.
