  • 1 teaspoon salt
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle salt over the cucumbers and let them sit for 10 minutes to draw out excess water.
  3. In another bowl, whisk together the rice vinegar, sugar, sesame oil, and soy sauce until sugar dissolves.
  4. Rinse the cucumbers under cold water to remove excess salt and pat dry.
  5. Add the cucumbers, green onions, and dressing to a large bowl and toss to combine.
  6. Sprinkle sesame seeds on top before serving.
