  • 8 ounces pasta
  • 2 cups corn, fresh or frozen
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then chop.
  3. In a large bowl, combine corn, cherry tomatoes, red onion, mayonnaise, lime juice, chili powder, and cilantro.
  4. Add the cooked pasta and bacon to the bowl, mixing gently.
