- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- Salt to taste
- In a large pot, heat olive oil over medium heat and cook turkey bacon until crispy.
- Remove bacon and sauté onion and garlic in the same pot until translucent.
- Add chicken ham and mixed vegetables, cooking for an additional 5 minutes.
- Pour in chicken broth and add thyme and black pepper. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Crumble the cooked bacon and add back to the pot.
- Season with salt to taste and serve warm.
