  • 1 cup brown sugar
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 2 cups chopped apples
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine flour, oatmeal, brown sugar, cinnamon, nutmeg, baking soda, and salt.
  3. Add melted coconut oil and vanilla extract to the dry ingredients and mix well.
  4. Gently fold in the chopped apples.
  5. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes until golden brown.
