  • 8 ounces dark chocolate, chopped
  • 2 cups heavy cream
  • 1 cup sugar
  • 6 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup milk chocolate, for garnish
  • Chocolate shavings, for garnish

Instructions

  1. In a double boiler, melt the semisweet and dark chocolate together until smooth. Remove from heat and let cool slightly.
  2. In a large bowl, whip the heavy cream until soft peaks form. In another bowl, beat the egg yolks with sugar, vanilla, and salt until fluffy.
  3. Fold the melted chocolate into the egg yolk mixture, then gently fold in the whipped cream until fully incorporated.
  4. In a separate bowl, beat the egg whites until stiff peaks form, then fold into the chocolate mixture.
  5. Pour the mousse into a prepared cake pan and refrigerate for at least 4 hours or until set.
  6. Before serving, garnish with milk chocolate and chocolate shavings.
