  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup brewed espresso, cooled
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons coffee liqueur
  • 1/4 cup dark chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the cooled espresso and vanilla extract.
  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes.
  8. Let the cupcakes cool completely.
  9. In a medium bowl, whip the heavy cream until soft peaks form, then fold in the mascarpone cheese and coffee liqueur.
  10. Top each cooled cupcake with the mascarpone mixture and sprinkle with dark chocolate shavings.

Notes

  • Let the cupcakes chill in the refrigerator for a couple of hours before serving for the best flavor.
  • You can use any leftover mascarpone mixture as a dip for fruit.
