- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup brewed espresso, cooled
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons coffee liqueur
- 1/4 cup dark chocolate shavings
- Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the cooled espresso and vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes.
- Let the cupcakes cool completely.
- In a medium bowl, whip the heavy cream until soft peaks form, then fold in the mascarpone cheese and coffee liqueur.
- Top each cooled cupcake with the mascarpone mixture and sprinkle with dark chocolate shavings.
