  • 1 pound chicken breast, sliced
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon sesame oil

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add the chicken slices and cook until golden brown.
  3. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger.
  4. Add the cooked noodles and sauce to the skillet. Toss everything together to coat well.
