A deliciously hearty stuffed pepper soup featuring turkey bacon for a comforting meal.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups cooked rice
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and chop.
  2. In the same pot, add the ground turkey and cook until browned.
  3. Add the onion, bell peppers, and garlic; sauté until softened.
  4. Stir in the diced tomatoes, chicken broth, cooked rice, and Italian seasoning.
  5. Bring to a simmer and cook for 15 minutes. Season with salt and pepper.
  6. Serve hot, garnished with chopped turkey bacon.
