A hearty and flavorful stuffed pepper soup that combines the deliciousness of turkey bacon with fresh vegetables.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 2 bell peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup uncooked rice
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add ground turkey and cook until browned.
  3. Add diced bell peppers, onion, and garlic. Sauté until vegetables are tender.
  4. Stir in diced tomatoes, chicken broth, and rice. Season with Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes or until rice is cooked.
  6. Stir in the cooked turkey bacon before serving.
