1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1 tsp vanilla extract
1 cup strawberry puree
¼ cup fresh strawberries, diced
Instructions
Preheat the oven to 325°F (163°C).
In a bowl, combine graham cracker crumbs and melted butter, then press mixture into the bottom of a springform pan.
In a mixing bowl, beat the cream cheese and sugar until smooth.
Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
Pour half the cheesecake batter over the crust, then swirl half of the strawberry puree into it.
Repeat with the remaining batter and strawberry puree.
Bake for 50-60 minutes or until set in the center.
Let it cool, then refrigerate for at least 4 hours before serving.
Notes
For a stronger strawberry flavor, add more puree.
Top with fresh strawberries for garnish before serving.
