  • 2 cups sushi rice
  • 1.5 cups water
  • 1 pound salmon fillet
  • 1 tablespoon sriracha sauce
  • 1 tablespoon mayonnaise
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 avocado, sliced
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse and cook the sushi rice according to package instructions.
  3. While the rice is cooking, mix together the sriracha, mayonnaise, soy sauce, and sesame oil.
  4. Once the rice is cooked, spread it in an even layer in a greased baking dish.
  5. Layer the salmon fillet on top of the rice, then spread the spicy mayo mixture over the salmon.
  6. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.
  7. Remove from the oven and top with sliced avocado and chopped green onions before serving.
