This delicious recipe combines the rich flavors of smoked salmon and poached eggs served on creamy avocado toast.

Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 4 ounces smoked salmon
  • 2 large eggs
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • Fresh dill for garnish

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. Mash the ripe avocado in a bowl and mix in the lemon juice, salt, and black pepper.
  3. Spread the mashed avocado evenly over the toasted bread.
  4. Poach the eggs in simmering water until the whites are set, about 3-4 minutes.
  5. Place the poached eggs on top of the avocado toast.
  6. Layer the smoked salmon over the eggs.
  7. Garnish with fresh dill and serve immediately.

Notes

  • For perfectly poached eggs, add a splash of vinegar to the water.
