- 1 pound boneless, skinless chicken thighs
- 4 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 cups sliced potatoes
- 1 cup frozen peas
- In a slow cooker, add chicken thighs and season with salt and pepper.
- Pour in the chicken broth and add carrots, celery, onion, garlic, thyme, rosemary, bay leaf, and potatoes.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- During the last 30 minutes of cooking, stir in the frozen peas.
- Before serving, remove the chicken, shred it, and return it to the soup. Discard the bay leaf.
