  • 1 pound boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups sliced potatoes
  • 1 cup frozen peas

Instructions

  1. In a slow cooker, add chicken thighs and season with salt and pepper.
  2. Pour in the chicken broth and add carrots, celery, onion, garlic, thyme, rosemary, bay leaf, and potatoes.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  4. During the last 30 minutes of cooking, stir in the frozen peas.
  5. Before serving, remove the chicken, shred it, and return it to the soup. Discard the bay leaf.

Notes

  • For added flavor, sauté the onions and garlic before adding them to the slow cooker.
  • Feel free to add other vegetables based on your preference.
