  • 1 pound chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 cup heavy cream

Instructions

  1. In a slow cooker, combine chicken, wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, pepper, and bay leaf.
  2. Cover and cook on low for 6-8 hours or until the chicken and rice are cooked through.
  3. Remove the chicken, shred it, and return it to the slow cooker.
  4. Add heavy cream to the soup and stir to combine.
  5. Serve warm and enjoy!
