A delicious and easy recipe for chicken tikka masala made in a slow cooker.

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 2 tablespoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a slow cooker, add the olive oil and then layer the chicken thighs at the bottom.
  2. In a separate bowl, mix the onion, garlic, ginger, garam masala, cumin, coriander, turmeric, cayenne pepper, crushed tomatoes, coconut milk, salt, and black pepper until combined.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. Once cooked, shred the chicken using two forks, stir to combine with the sauce, and garnish with chopped cilantro before serving.
