- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons garam masala
- 1 tablespoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon cayenne pepper
- 1 can (14 ounces) crushed tomatoes
- 1 cup coconut milk
- 1 tablespoon salt
- 1 tablespoon sugar
- 1/4 cup fresh cilantro, chopped for garnish
- In a slow cooker, add olive oil, chopped onion, garlic, and ginger. Stir to combine.
- Add the chicken thighs on top of the onion mixture.
- Sprinkle garam masala, cumin, turmeric, cayenne pepper, salt, and sugar over the chicken.
- Pour crushed tomatoes and coconut milk over everything.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is tender.
- Remove the chicken, shred it, and return it to the slow cooker. Stir everything together.
- Garnish with fresh cilantro before serving.
