A delicious slow cooker recipe for chicken tikka masala that is perfect for busy weeknights.

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons garam masala
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup coconut milk
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1/4 cup fresh cilantro, chopped for garnish

Instructions

  1. In a slow cooker, add olive oil, chopped onion, garlic, and ginger. Stir to combine.
  2. Add the chicken thighs on top of the onion mixture.
  3. Sprinkle garam masala, cumin, turmeric, cayenne pepper, salt, and sugar over the chicken.
  4. Pour crushed tomatoes and coconut milk over everything.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is tender.
  6. Remove the chicken, shred it, and return it to the slow cooker. Stir everything together.
  7. Garnish with fresh cilantro before serving.

Notes

  • Serve with rice or naan for a complete meal.
  • Can be made ahead of time and reheated.
