A comforting and easy slow cooker recipe for chicken and wild rice soup that warms you from the inside out.

Ingredients

  • 1 pound chicken breast
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)

Instructions

  1. Place the chicken, wild rice, chicken broth, carrots, celery, onion, garlic, thyme, and sage in the slow cooker.
  2. Season with salt and pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and rice is tender.
  4. Remove the chicken, shred it, and return it to the pot.
  5. If desired, stir in cream before serving.

Notes

  • For added flavor, consider sautéing the onions and garlic before adding them to the slow cooker.
  • This soup can be refrigerated for up to 3 days.
