- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- In a large skillet, brown the beef chunks over medium heat.
- Transfer the beef to the slow cooker.
- Add the carrots, potatoes, onion, and garlic to the slow cooker.
- Mix in the beef broth, tomato paste, thyme, salt, pepper, and bay leaves.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- Remove bay leaves before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with a little cold water and stir it into the stew during the last hour of cooking.
