Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. In a large skillet, brown the beef chunks over medium heat.
  2. Transfer the beef to the slow cooker.
  3. Add the carrots, potatoes, onion, and garlic to the slow cooker.
  4. Mix in the beef broth, tomato paste, thyme, salt, pepper, and bay leaves.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  6. Remove bay leaves before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with a little cold water and stir it into the stew during the last hour of cooking.
