  • 1 can butterbeans
  • 2 tablespoons olive oil
  • 1 onion
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme
  • 1 vegetable stock cube

Instructions

  1. Chop the courgettes and onion.
  2. Heat olive oil in a slow cooker.
  3. Add the onions and garlic, sauté until translucent.
  4. Add the courgettes and butterbeans.
