A rich and creamy soup that celebrates the goodness of cauliflower with a cheesy twist.

Ingredients

  • 1 head cauliflower, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add the garlic and chopped cauliflower, cooking for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce to a simmer and cook until the cauliflower is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream and cheddar cheese, mixing until the cheese is melted. Season with salt and pepper.
