4 large baking potatoes
1 pound ground beef or lamb
1 cup frozen peas and carrots
1 onion, diced
2 cloves garlic, minced
1 cup beef broth
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
2 cups mashed potatoes
1 cup shredded cheddar cheese
Instructions
Preheat the oven to 400°F (200°C).
Pierce the potatoes with a fork, rub with oil, and bake for 45-60 minutes until tender.
In a skillet, cook the ground beef or lamb over medium heat until browned. Drain excess fat.
Add the onion and garlic, cooking until softened.
Stir in the peas, carrots, beef broth, tomato paste, and Worcestershire sauce. Simmer for 10 minutes.
Cut the baked potatoes in half and scoop out some flesh to make room for the filling.
Fill each potato with the meat mixture, top with mashed potatoes, and sprinkle with cheddar cheese.
Bake for an additional 15 minutes until cheese is melted and golden.
