These Sheet Pan Chicken Pitas with Herby Ranch are the perfect weeknight dinner that the whole family will love!

Ingredients

  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt to taste
  • 1/2 teaspoon black pepper
  • 4 pita breads
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/3 cup Herby Ranch dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine diced chicken, olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread the chicken mixture evenly on a sheet pan and bake for 20-25 minutes or until cooked through.
  4. While the chicken is baking, prepare the pitas by warming them in the oven for 5 minutes.
  5. Once the chicken is done, assemble the pitas by filling them with mixed greens, tomatoes, cucumbers, and the baked chicken.
  6. Drizzle with Herby Ranch dressing before serving.
