- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 pound cooked salmon, shredded
- 1 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1/4 cup green onions, sliced
- 2 sheets nori, cut into strips
- 2 tablespoons sesame seeds
- Preheat your oven to 350°F (175°C).
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker, or in a pot on the stove, bring to a boil, then reduce to a simmer and cover until done.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Combine this with the cooked rice.
- In a separate bowl, mix together the shredded salmon, mayonnaise, sriracha, and green onions.
- Spread the sushi rice in a baking dish, then layer the salmon mixture on top.
- Sprinkle with nori strips and sesame seeds.
- Bake in the oven for 20-25 minutes until heated through.
- Serve warm and enjoy!
