1 cup couscous
2 cups vegetable broth
1 zucchini, chopped
1 bell pepper, chopped
1 red onion, sliced
2 cups cherry tomatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the chopped vegetables with olive oil, garlic powder, oregano, salt, and pepper.
