  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine diced zucchini, red bell pepper, yellow bell pepper, and cherry tomatoes.
  3. Drizzle with olive oil, and sprinkle with garlic powder, oregano, salt, and black pepper. Toss to coat.
  4. Spread the vegetables evenly on a baking sheet and roast for 20-25 minutes until tender.
  5. In a saucepan, bring vegetable broth to a boil. Add couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  6. Combine the roasted vegetables with the couscous and mix thoroughly.
