- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, diced
- 1 medium bell pepper, chopped
- 1 medium red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cherry tomatoes, zucchini, bell pepper, and red onion with olive oil, salt, pepper, and Italian seasoning.
