Ingredients

  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss carrots, onion, garlic, olive oil, cumin, salt, and pepper.
  3. Spread the mixture on a baking sheet and roast for 25-30 minutes until tender.
